The most common explanation forgoubuli baozi(dogs-won't-touch dumplings) is that they were named after their inventor, a man born when Chinese infant-mortality rates were still high and mothers named their children with a mind to protecting them from beasts and evil spirits. Other stories abound, but these addictive morsels of pork-stuffed bread remain popular, and are a cheap, satisfying way to refuel during a long day of shopping south of Qian Men.
