Shiji Xing
Set in grape fields north of town, with a meltwater stream flowing by, this is a favorite among locals for carousing late into the night. Bakri, a Uighur entrepreneur, caters to the fantasies of both locals and foreigners, recruiting handsome waiters from Khotan and dancers from all over Xinjiang. Grapevines hang above the tables, and discreet fans keep you cool. Waiters shuffle on their knees across elevated platforms and somehow manage to look elegant.Shiji xing yangpai(lamb chops) is worth the expense, and don't miss the chance to cook your own kabobs. For the long-suffering China traveler, a real treat -- dessert! Sweets(tianshi)are not on the menu, but a platter of shortbread and gingerbread biscuits, many with tart apricot fillings, can be arranged. Try mulberry wine(sangshen jiu),less sickly-sweet than most in the region. The wine will help if you get hauled up on stage.
