Ming Yuan
For amazingly good cuisine that's unique to Nanjing, head out to the Shangri-La Hotel located on a small hill, Ding Shan, in the northwest part of town. Created here by chefs more than 20 years ago, Ding Shan cuisine has become an integral part of Nanjing's culinary lore. Among the restaurant's many specialties, the drunken crab Ding Shan style (crab steeped in wine, honey, and spices for a week and served raw) is exquisite, as is the sauteed Yunnan mushroom with crab paste (crab and wild mushrooms served in a spicy sauce). Finish with the signature fish noodle, very fine handmade noodles cooked in a rich fish broth.
