Caigen Xiang

With four outlets and a cooking school, this is one of Chengdu's most popular restaurants. Specializing in dishes made with traditional pickled vegetables(pao cai),the restaurant has won awards for itspaojiao moyu zai(pickled pepper with baby squid). Two other distinctive dishes are Caigen Xiang spareribs(Caigen Xiang paigu)which fall off the bone and are cooked in a delicious sauce that renders them juicy and tender, and fish with pickled vegetables(paocai jiayu).This is a whole fish served in a red sauce with a variety of fresh and pickled vegetables. Bones have to be dealt with, but the fish is delicate and tasty.
