Be prepared to have one of the best noodle experiences of your life. The drafty, warehouse-style restaurant, open for breakfast and lunch, doesn't have much atmosphere, but no one's here for the decor -- it's all about the beef noodles, which is the only thing you can get here. Lanzhou niurou lamian has migrated to all parts of the country by way of little street-side noodle shops, but this is the real deal, and known by locals as the best place to sample the dish. Pay your ¥3 (40¢) to the cashier, who will give you a ticket to collect your bowl at the back of the restaurant. The tender, thin noodles are boiled in a huge vat of beef broth, then chili and sesame sauce and bits of beef are tossed in at the last minute.
