Mingde Gong
The Mingde Gong, a four-story palace that gets progressively more luxurious as you ascend (culminating in dark wood-paneled rooms, gold-plated cutlery, and some of the biggest karaoke TVs you'll ever see), is the flag-bearer for Gansu cuisine -- "long cai." While the boss is a Hui entrepreneur, the chefs hail from Beijing and Guangzhou. Signature dishes includemenggu yangpai(Mongolian lamb), the huge and spicykao yangtui(roast leg of lamb with walnuts), a deep-fried lamb and green-pepper pancake(bobing yangrou),and the sweet vegetarian dish, xishi jinju baihe.
